Warm freshly baked banana bread
Just Like Gramma's Banana Bread
There is nothing better than the smell of homemade banana bread baking in the oven!
~ Gluten & Dairy Free ~
Makes 1 loaf or 12 muffins
3 ripe bananas mashed
1/4 cup unsweetened applesauce
1 egg (or flax egg: 1 tbsp ground flaxseed with 2 tbsp hot water)
1/4 cup coconut oil or vegan butter
1 tsp gluten-free vanilla
1/2 cup brown sugar or coconut palm sugar
1 1/2 cups gluten-free flour
(Bob Mill's 1:1 flour, white rice flour)
1 tsp baking soda
1/4 tsp nutmeg (optional)
1/2 cup dairy-free chocolate chips (optional)
Preheat oven to 350 degrees.
In a large bowl add all wet ingredients, and dry ingredients in a separate bowl, combine and mix with a spoon until moist.
Line loaf pan with parchment paper or muffin cups.
Bake a loaf for 45 minutes or muffins for 14 minutes.
Store in a covered container at room temperature
Tip: For a healthier option try 1 1/2 cups of quinoa flour or 1/2 cup almond flour with 1 cup white rice flour.
