Broccoli & Cheese Soup

This creamy soup is dairy free and so delicious!

~ Gluten & Dairy Free ~

4 servings

30 minute meal 

Ingredients:

1 tbsp vegan butter

1 onion, chopped small

1/4 cup celery, thinly sliced

2 cups of chicken or vegetable broth

2 cups of canned lite coconut milk

2 cups broccoli florets, chopped, lightly boiled

2 cups of grated cheddar dairy free cheese*

2 tbsp nutritional yeast 

Dash of pepper

1) In a small frying pan over medium-low heat, sauté onion and celery in 1 tbsp of vegan butter. Cook for about 5 minutes and remove from heat.  

2) In a small pot boil broccoli until tender.

 

3) In a medium sized pot bring the coconut milk and broth to a boil. Add the broccoli, celery and sautéed onions. Bring to a boil then let simmer.  

 

4) Stir in the grated dairy-free cheese, nutritional yeast and pepper. Continue to simmer until warm for 10 minutes.

Tip: 

*Violife Cheddar Style Shredded is an excellent dairy-free cheese to put in this soup.
