Broccoli & Cheese Soup
This creamy soup is dairy free and so delicious!
~ Gluten & Dairy Free ~
1 tbsp vegan or butter
1 onion, chopped
1/4 cup vegan butter, melted
1/4 cup white rice flour
2 cups of chicken or vegetable broth
2 cups of dairy free milk
2 cups broccoli florets, chopped
1 cup carrots, chopped
1/4 cup celery, chopped
2 cups of grated dairy free cheese
2 tbsp nutritional yeast (optional)
Dash of pepper
1) In a small frying pan over medium-low heat, sauté onion in 1 tbsp of vegan butter. Cook for about 5 minutes and remove from heat.
2) In a medium sized pot whisk 1/4 cup of melted butter and rice flour on low-medium heat. Heat for about 3 minutes making sure you keep the flour from burning. Whisk in milk and add broth, broccoli, carrots, celery and sautéed onions. Bring to a boil then let simmer for 30 minutes.
3) Add grated cheese, nutritional yeast (optional) and pepper. Stir and warm for 10 minutes.
Ready in 60 minutes.
