Cranberry Walnut Salad

A fresh salad that is quick and healthy for lunch!

Pairs nice with leftover turkey!

Makes 4 Portions

Quick and easy!

Ingredients:

1 smaller head of romaine lettuce or baby spinach or 1/2 head lettuce

1/2 cup dried cranberries 

1/4 cup chopped walnuts, pecans or roasted almonds

Blueberries (optional)

Beet, raw, peeled and chopped (optional)

 

Dressing:

1/2 cup olive oil

2 tbsp balsamic vinegar

1) Chop and wash lettuce. 

2) Whisk or blend salad dressing ingredients together.

3) Pour dressing over lettuce. Top with walnuts and cranberries.

Ready in 15 minutes!
