Egg Salad

This open-faced sandwich is so creamy and delicious!
Simple and easy to make!
~ Gluten & Dairy Free ~

1 serving

1-2 egg, boiled and chopped (I prefer organic)
1/2 tsp prepared mustard
1 1/2 tbsp veganaise or vegan mayo
1/2 celery stalk, chopped

1 tbsp yellow onion or chives, finely cut (optional)

1 piece of romaine lettuce

Dash of pepper and paprika

1 slice of gluten-free bread, toasted

1. Boil the egg(s) for 10 minutes. Let cool and peel the egg. Cut into pieces and place in a bowl. 

2. Add the mustard, vegan mayo, celery, onion and mix into the chopped egg. Toast a slice of gluten-free bread. Top with a piece of lettuce and egg salad. 

Enjoy this easy to make a sandwich!
