Fried Egg Sandwich

A simple egg sandwich paired with the wonderful flavour of basil and chives!

~ Gluten & Dairy Free ~

4 servings

Ingredients:

8 slices gluten-free bread

Vegan butter

4 large eggs

1 small tomato (cut into 8 slices)

8 fresh chives, chopped

2 tbsp vegan mayo (or regular mayo)

1/4 tsp dried basil 

Dash of salt and pepper

Optional: 

Avocado slices

Vegan cheese

1. In a large frying pan, put 1 tsp of vegan butter and crack 4 eggs. Fry and flip on medium-low heat. Then sprinkle with dried basil, salt and pepper. 

2. Meanwhile, start to toast the gluten-free bread. Butter each piece of bread. 

3. Chop or cut chives into small pieces. Wash and slice the tomato so you have at least 8 thin slices.

4. Put vegan mayo on buttered toast, then a fried egg, 2 tomato slices, and chopped chives on a sandwich. Top with a slice of bread and cut in half. 

Serve warm! Enjoy
