Warm freshly baked banana bread

Just Like Gramma's Banana Bread

There is nothing better then the smell of homemade banana bread baking in the oven!

~ Gluten & Dairy Free ~

Makes 1 loaf or 12 muffins

3 ripe bananas mashed

1/2 cup unsweetened applesauce

1 egg (or flax egg: 1 tbsp ground flaxseed with 3 tbsp hot water)

1/4 cup coconut oil (1/2 cup vegan butter)

1 tsp vanilla

1/2 cup coconut palm sugar

1 1/2 cups gluten-free flour

(Bob Mill's 1:1 flour, white or brown rice flour)

1 tsp baking soda

1/4 tsp nutmeg (optional)

1/2 cup dairy-free chocolate chips (optional)

  1. Preheat oven to 350 degrees.

  2. In a large bowl add all wet ingredients, then all dry ingredients and mix until moist.

  3. Line loaf pan with parchment paper or muffin cups.

  4. Bake a loaf for 45 minutes or muffins for 12-14 minutes.

  5. Store in a covered container at room temperature

 

Tip: For a healthier option try 1 1/2 cups of quinoa flour or almond flour.
