Warm freshly baked banana bread

Just Like Gramma's Banana Bread

There is nothing better then the smell of homemade banana bread baking in the oven!

~ Gluten & Dairy Free ~

Makes 1 loaf or 12 muffins

3 ripe bananas mashed

1/2 cup unsweetened applesauce

1 egg (or flax egg: 1 tbsp ground flax seed with 3 tbsp hot water)

1/4 cup coconut oil (1/2 cup vegan butter)

1/2 cup coconut palm sugar

1 1/2 cups gluten free flour

(Bob Mill's 1:1 flour, white or brown rice flour)

1 tsp vanilla

1 tsp baking soda

1/4 tsp nutmeg (optional)

1/2 cup dairy free chocolate chips (optional)

  1. Preheat oven to 350 degrees.

  2. In a large bowl add all ingredients and mix until moist.

  3. Line loaf pan with parchment paper or muffin cups.

  4. Bake for 45 minutes.

  5. Store in covered container at room temperature

 

Tip: For a healthier option try 1 1/2 cups of quinoa flour or almond flour.
