Lemon Tahini Dressing

This salad dressing is creamy and delicious!

You won't believe there's no dairy!

~ Gluten & Dairy Free ~

4 Servings

1 head of romaine lettuce or 4 cups of spinach

Dressing: 

1/2 cup olive oil

Juice from 1 fresh lemon

1 tps gluten free soy sauce/tamari

2 1/2 tbsp tahini

2 tbsp pure maple syrup

1 tbsp canned coconut milk

2 tbsp warm water (to thin sauce)

Put dressing ingredients into a cup blender or use a whisk, mix until creamy. Mix dressing with lettuce and add toppings.

Optional toppings:

  • 1 avocado

  • 1/4 cup cucumber, chopped

  • 1-2 pieces of cooked chicken or meat alternative

  • 2 green onion, chopped

  • 1/2 red pepper, chopped

  • 1/4 cup pumpkin seeds and/or sunflower seeds

  • garnish with cilantro

  • gluten free croutons
