Pancake Breakfast Wrap

Kids will love these breakfast wraps!

~ Gluten & Dairy Free ~

Very easy!!

Ingredients:

-Your favourite pancake mix, it can be homemade or I used Kinnikinnick Pancake and Waffle Mix

-4 large eggs

-Cooking spray

-Pure maple syrup

Optional:

4  vegan cheese slices

1/4 cup grated vegan cheese

4 gluten free bacon cut into pieces

4 pieces of gluten free deli meat like ham, cut into pieces

1/4 cup finely diced red peppers to add to eggs

1) Prepare pancakes Using a small frying pan make 4 flat pancakes. 

 

2) Lightly scramble each egg (adding bacon, peppers or grated cheese) and fry them individually. 

 

3) Put a cooked pancake on a plate, place a cooked egg (and vegan cheese slice if you wish) in the middle and roll.

Serve with pure maple syrup!

Tip: I made these very simple but you can add in your favourite toppings and customize them. Just make sure you keep the egg as thin as possible. Puffy eggs are harder to wrap.
