Melted Snowman Sugar Cookies!

These melted snowman sugar cookies are lots of fun for the family to make! They are also a great gift idea for family, friends, neighbours, doctors offices and anyone else you are thinking of during the holidays.

Steps:

1) Make gluten/dairy-free sugar cookies.

2) Prepare or buy pre-made vanilla and chocolate icing.

3) Once cookies have cooled spread vanilla icing, placing a large marshmallow near the back. Along with three button like circle sprinkles. (see picture)

4) Place a scoop of chocolate icing in a piping bag. Using a Wilton decorating tip #5 design two stick arms, eyes and a mouth. You can also use small ball sprinkles for the mouth if you wish, instead.

5) Place a couple drops of orange food dye (or yellow and red) into a small amount of vanilla icing. Add the orange icing to a piping bag and using Wilton #5 make a carrot nose, by slowly pulling the piping bag away and creating a point.

2 Dozen

Ingredients:

1/2 cup vegan butter

1/2 cup shortening

1 cup white sugar

1 large egg

1 tsp gluten-free vanilla

3 cups gluten-free flour

(I used 1 cup of pancake mix and 2 white rice flour)

1 tsp xanthan gum

1/2 tsp baking soda

1/2 tsp baking powder (unless in flour)

1) Preheat oven to 350 degrees. Line a cookie sheet with parchment paper.

2) Blend butter, shortening and sugar in a bowl. Mix in the egg and vanilla. Then flour, xanthan gum, baking soda and powder.

​

3) Roll dough into 1 inch balls or use a cookie dough scoop. Do not flatten dough balls.

​

4) Bake at 350 degrees for 12 minutes. Let cool.

​

Wait until cookies have cooled to room temperature before decorating.

Creamy Vanilla Icing

Ingredients:

Makes 1 cup

2 tbsp vegan butter

2 tbsp vegetable shortening

2 tsp gluten-free vanilla

2 1/4 cup Icing sugar

2 tbsp canned coconut milk

​

1. Blend vegan butter and shortening until smooth and creamy.

2. Add vanilla, then slowly add icing sugar. Then add coconut milk.

​

3. Blend until icing is smooth and creamy.

​


Homemade Chocolate Icing

Makes about 1 cup

Ingredients:

2 tbsp vegan butter, room temperature

2 tbsp Crisco vegetable shortening

2 1/4 cup Icing sugar

1/3 cup unsweetened cocoa powder

2 tbsp canned coconut milk or dairy-free milk

1 tsp gluten-free vanilla

1. Blend vegan butter and shortening until smooth and creamy.

2. Add icing sugar and cocoa powder. Then add coconut milk and vanilla.

​

3. Blend until icing is smooth and creamy.
