Buttery goodness without the dairy!

1 lbs scallops

1 tsp olive oil

1 tsp vegan butter 

Dash of sea salt and pepper

1. Heat pan to medium heat

2. Rinse and dry scallops 

3. Melt vegan butter in pan, then add olive oil and scallops. Sprinkle with salt and pepper. Cook for a minimum of 2 minutes per side, until golden. I cook for several minutes.

Serve warm on a glass serving dish.
