Lemon Protein Balls
These little bites have a sweet, nutty, lemon flavor.
This is an easy and nutritious snack that can be made ahead.
Gluten & Dairy Free
1 cup dates, pitted
1 cup almonds (raw and unsalted)
1/2 cup pumpkin seeds (raw, unsalted)
2 tbsp chia seeds or hemp seeds
1Zest and juice from 1 lemon
1 tsp vanilla
1) In food processor, add dates (check each one to make sure the pit has been removed), almonds, pumpkin seeds, and chai seeds pulse until well chopped.
2) Add lemon and vanilla and pulse until mixture holds together.
3) Form into 1 tbsp balls and store in the fridge or freezer.
No baking required!
